Pasta alla norcina

One of the great advantages of truffles is that it allows us to create simply unforgettable dishes using very few ingredients.
For this recipe we have chosen to share with you one of the traditional Umbrian dishes: Norcina pasta.

We are talking about a very rich dish that involves the use of sausage, cooking cream, pecorino (optional) and truffle grated coarsely or minced or in the form of flavored oil.
The Norcina pasta is ideal for a family lunch, with friends or to celebrate a special occasion traveling through the flavors and scents of the earth.
... and let's not forget that it is a recipe that is prepared very quickly, as we like!

INGREDIENTS FOR 4 PEOPLE:
- 360 grams of half-sleeves
- Precious Black Truffle Carpaccio or Truffle-flavoured Oil or Grated Fresh Truffle (Berlingeri Truffles)
- 250g of sausage
- 200ml cooking cream
- 1/2 glass of white wine
- EVO oil q.b.
- Salt q.b
Pepper q.b.
- Pecorino (optional)

Procedure:
After starting the pasta cooking we can dedicate ourselves to the preparation of the seasoning. In a frying pan pour two tablespoons of EVO oil and fry the finely chopped onion. Add the crumbled sausage, remove it without darkening and drizzle with white wine, let it evaporate and cook for 8-10 minutes. Now we can add the cooking cream that we will let cook for a few seconds after adjusting salt and pepper. Keeping the heat low, add the truffle-flavoured oil and mix. Drain the pasta and pour it into the pan containing the seasoning and keep helping us with a spoon.
Everything's ready! We prepare the portions, we grate the fresh truffle and, for those who like it, also the pecorino.
